Lofoten is home to mouthwatering and unique culinary traditions. At Nusfjord Arctic Resort, the food and the individual fresh ingredients are the centre of your experience. The recipes and crafts of our kitchen dates back many hundred years, as the techniques we use today were important for the conservation and preservation of food across the harsh northern seasons.
In this course, you will learn to make some of the traditional foods of the north, with self-caught and local ingredients such as codfish, crab, sea urchins, seaweed and kelp. Nusfjord has an original smokery, where the salmon for our fine dining experiences is still prepared today. Our chefs will give you introduction to the uniqueness of the nordic cuisine and you will learn about filleting the fresh catch and the traditional ways of preparing the famous dry fish and smoked salmon.
